Almond Paste vs. Marzipan
Almond paste generally contains 2 parts almonds to 1 part sugar, whereas marzipan contains a higher ratio of sugar to almond. The high almond content of almond paste makes it a wonderful filling for cakes and baked goods, adding a rich almond taste. Marzipan is more pliable than almond paste; it is often molded into candy and eaten as is or rolled out as a fondant for cakes. To make marzipan, you can combine equal parts confectioner's sugar and almond paste with a touch of light corn syrup.
Our almond paste is packed in steel cans to preserve freshness. It is good unopened for 2 years from the date on the bottom of the can. Once opened, the paste will stay fresh for a month; we recommend covering the can of unused paste with a layer of plastic wrap and a layer of foil and storing it in the fridge. And, yes, the paste can be frozen so it can last for up to a year (You're not the only one wondering this)! Just remove the remaining almond paste from the can, wrap it tightly in plastic wrap, and store the wrapped paste in a tightly sealed container in the freezer.
