Cotton gloves are often used in delicate sugar and chocolate work.
The thin white gloves prevent fingerprints on chocolate and on pulled isomalt pieces.
For isomalt or pulled and blown sugar, the cotton gloves are worn against the skin and an additional protective latex glove is worn on top. This allows any spilled isomalt to be insulated away from the skin for a few extra moments while the latex glove is quickly pulled off and away from the cotton gloved hand. It also prevents sticky isomalt for adhering to the cotton.
