Requires a 10 cup batter, 5 cups for each side of the turkey. (Recipe loft varies. Nordic Ware suggests filling the pan no higher than 3/4 of the way full.)
Interior is coated with a premium non-stick surface for easy release.
We recommend using vegetable oil to coat the sides and then flour the pan with a light dusting to make cake removal even easier.
Once cakes are cool enough to handle, carefully flip cakes out on a cooling rack.
Once completely cool, place the cakes back into the pan and use a long serrated knife to cut the cake flush with the pan and remove the cake "dome".
Remove one side of the cakes from pan again.
Using soft icing, ganache, or butter, spread evenly across the cut sides of the turkey and press both halves together. You might prefer to leave one half of the turkey inside the pan for support during its final stage of cooling.
Allow the cakes and center frosting, icing, ganache, or butter to solidify or harden in the fridge for 1 hour before attempting to stand on end for presentation.
