Storage: Store for up to one year in airtight container.
Once opened, assuming you do not introduce moisture into the pail and it is sealed properly again, it is good for at least six months after being opened while stored at room temperature. Unused fondant should be resealed quickly and wrapped airtight to prevent crusting and drying. Trimmings should be stored separately so as not to introduce other ingredients to your pail of fondant. Store at ambient temperature away from direct light.
The fondant on a fondant-covered cake at room temperature is good for 7-10 days. (Keep in mind, some cakes with dairy or specialty fillings must be stored in the refrigerator. The cold fondant will draw moisture when it is refrigerated, creating a glossy sheen on your cakes. We recommend storing refrigerated cakes inside a bakery box, wrapped fully and tightly with cling wrap.)
